Tomato & Garlic Confit

A simple confit preparation that provides you with 3 amazing ingredients for use in other recipes & snacks. Minimal effort for a big effect. At the end of this process you have soft spreadable garlic, jammy spreadable tomatoes, and olive oil with a far more rich and complex infusion of flavors. Use any of the three as amazing flavor boosts in many other recipes.


[ Gluten Free - by Default ]

[ Dairy Free - by Default ]

[ Vegetarian - by default ]

[ Vegan - by default ]

[ Kosher - by default ]


2 pints cherry tomatoes (ideally on the vine)

1 bottle of extra virgin olive oil (go cheap on this, not a good use of expensive oil)

1 head of garlic (peeled)

6 fresh thyme sprigs

4 Basil stems


Preparation

  1. Preheat the oven to 225F.

  2. Put everything in a casserole dish & bake for 3 hours.

  3. Remove and discard the herbs and stems.

  4. Collect the garlic cloves and set into their own storage container.

  5. Strain the rest to separate the oil and the tomatoes.

  6. Set the tomatoes into their own storage container.

  7. Once cooled, return the oil to original bottle.
