A Sweet, Savory, & Creamy Main
[ Gluten free - By Default ]
4 Chicken Thighs (Debone, Skins Optional)
1 Apple (Honey Crisp, Cosmic Crip, Jazz, or Envy are ideal)
1 ounce Lime Juice
8 oz of Brie
Butterfly and flatten the thighs
Slice the apple thinly (ideally using a mandolin for consistency).
Pre-heat the oven the 375 degrees.
Toss the apple in lime juice.
Remove the rind & portion the brie evenly.
Lay 1/4 of the apples & brie per thigh, favoring 2/3 of the surface.
Roll up the thighs, starting from the filled end.
Set with toothpicks.
Bake for 20m.
Pull and Rest for 5 minutes.
Slice into 5ths to serve as medallions.
Best served with Crispy Taterlings & Viridian Pesto or with Carrot & Parsnip Puree
