Lemon Blueberry Loaf

Cooking spray
3/4 cup sugar
1/4 cup (1/2 a stick)
1/4 cup sour cream
2 eggs
1 lemon
1/3 cup milk
1 2/3 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 1/4 cups frozen blueberries
2 tbsp cinnamon
Zest & Juice Lemon
Mix sugar and zest
Combine zested sugar with butter - whisk
Add sour cream, eggs, and lemon juice - whisk
Once blended, slowly whisk in milk
Combine flour, salt, cinnamon, and baking powder in seperate bowl
Remove 2 TBSP of dry to smaller bowl & toss frozen fruit in
Combine Wet and Dry mixtures, Spoon or rubber spatula (leave it a little rough)
Preheat over to 350 Spray pan with pam
Pour 1/3 of batter in, sprinkle in 1/2 fruit. Then repeat alteranting until all fruit and batter is in.
Dust the top of the loaf with remaining dry mix from coating fruit
Bake for 1 hour
Test with toothpick before removing
